This is a large-volume prepared mix that's bursting with the tastes of the festive period, making it excellent for your holiday party. Any leftover cordial to use in breakfast cocktails, desserts, or to mix additional servings of the drink.

For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Place all the components inside a saucepan, bring to a gentle boil, mixing so the sugar melts. After that, turn off the burner and leave to cool down completely. Transfer into a sealable bottle, close it keeping it in the refrigerator, it can be stored for about a month.
Preparing the Batch Mix: Mix every liquids into one big jug, let it rest for one hour, then strain best through muslin, so it's perfectly clear.
For serving: Pour 85ml of your cocktail base to a stirring glass packed with ice, and stir gently for a minute to chill. Strain to a chilled martini glass or a similar vessel, decorate with a few cranberries and finish by giving it a brief mist with the mandarin essence over the drink.
